‘Tokyo Calling’ Iced Tea

INGREDIENTS – serves one

2g East India Company Matcha powder
220ml Hot water
20ml Pistachio syrup
20ml Lemon juice
150g of ice cubes
1 Lemon for garnish

 

METHOD

Step 1. Boil the kettle and allow the water to cool to approximately 70 degrees centigrade. Using a digital scale or appropriate tea scoop, weigh out the Matcha powder and transfer to a measuring jug. Pour the 220ml of hot water over the Matcha powder. With a Matcha whisk (or, small hand held electric stick blender or milk frother), blend the Matcha mixture for approximately 15 seconds until a foaming, vibrant green liquid is obtained and all the Matcha granules are fully incorporated. Cover the measuring jug and allow to cool to room temperature.

Step 2. Add the pistachio syrup and lemon juice to the Matcha and stir well to combine, then transfer the mixture to a lidded container, or jar, and leave in the fridge to chill.

Step 3. To serve the ice tea, fill a highball glass or tall tumbler to the brim with the ice cubes. Shake the container of ice tea to incorporate any remaining Matcha granules that may have settled, then pour into the glass of ice cubes.

Step 4. Garnish with a twist of lemon and enjoy!
