Our recipe for the all-time favourite British sweet biscuit is distinctively crunchy, with a rich ginger finish. The perfect consistency to dunk in tea or coffee, and a natural accompaniment to a cup of East India Company Darjeeling tea.

Ginger, usually cultivated in Asia as a flavouring for savoury foods, was regularly shipped to Britain by The East India Company, where it became a popular flavouring in gingerbreads, biscuits and puddings.
